request standard all the ATC's instruction and some callsign

I m a foreign student pilot,no experiences of flight,in one and half month we will be sent to flight safety international aviation academy(vero beach,florida),so I want to download some ATC's instructions (word format or pdf is ok)especially in orlando international airport and Vero Beach Municipal Airport.

I also cant clearly know how to read these callsigns,eg:continental,northwest,southwest,airtran,taca airlines,westjet,air canada,frontier airlines.

The Aeronautical Information Manual (AIM) section of the FAA's FAR/AIM has basic information on ATC procedures.  When you go to the academy, they will most likely be giving you the FAR/AIM to study as part of your training.

But until then, here's a copy online: http://www.faa.gov/air_traffic/publications/atpubs/aim/

Chapter 4, Section 2 is what you're looking for. 

As far as the second part of your question, I have no idea what you're trying to ask.  Could you elaborate?

For your second question, have a look at JO 7340.2 at the FAA's site:

http://www.faa.gov/air_traffic/publications/atpubs/CNT/CNTHME.htm

This shows you the list of companies by ICAO code, callsign, and company.
