I wonder why each of them didn't just do another 150ft each.. safe zone is 1000ft right?

1000ft is usually the minimum separation requirement, but these planes were at the same altitude until they responded to a TCAS RA. Which means the in the cockpit each pilot got a warning about the other plane and a "resolution advisory" (ra) on what to do to miss. The two systems do "talk" to each other so that one plane climbs and the other descends. Obviously it would be bad if they both were to climb or descend. I don't think they leveled off 700 apart and then passed each other. They were probably still climbing/descending, and at the point at which they crossed they were 700 ft apart.
